Apply the factors: carbohydrate 24 times 4 is 96 kcal; fat 8 times 9 is 72 kcal; protein 4 times 4 is 16 kcal.

Sum: 96 plus 72 plus 16 is 184 kcal per serving.
Fraction from fat: 72 over 184 is 0.39, about 39%.
Check the traps: 144 kcal applies a factor of 4 to everything; 22% is fat's share by mass (8 of 36 g), not by energy; 216 kcal double-counts fat.

The trap: Using the mass share instead of the energy share. Fat is 22% of the nutrient mass here but 39% of the energy, because its Atwater factor is more than double that of carbohydrate and protein. classic slip!

What FOODSCI100 is, and where it sits

FOODSCI 100 is the University of Auckland's introductory food science and nutrition course, taught in the School of Chemical Sciences and core to the BSc specialising in Food Science and Nutrition. The catalogue describes an interplay between food, nutrition and health, with the chemical, biological, sensory and processing aspects of food alongside societal, legislative and regulatory context.

The six published blocks — food systems, fundamentals of nutrition, carbohydrates, fats and oils, water, and minerals — are illustrated with real food systems; proteins and vitamins are left to FOODSCI 200. Lectures split roughly half and half between food science, delivered by Peter Swedlund of the Faculty of Science, and nutrition, delivered by Nicola Gillies of the Faculty of Medical and Health Sciences.

Assessment is laboratory work 25%, a take-home quiz 5%, two tests 20% and a final examination 50%, with plussage so a better exam mark replaces the test marks. There are three lectures a week, one of which every fortnight is an interactive demonstration, and five compulsory laboratory experiments. In 2026 the course runs in Semester Two at the City campus and is limited entry, with BSc Food Science and Nutrition students guaranteed a place.

How it differs from its first-year siblings. FOODSCI 100 is a chemistry course wearing a nutrition label. Half the lectures come from a chemist and the labs are real analytical chemistry — if you expected diet advice, the Weende proximate analysis will surprise you.

  • The catalogue publishes no exam hurdle for FOODSCI 100. Plussage applies: if your final exam mark is higher than your mid-term test marks, the exam mark is used for the tests as well. Laboratory attendance is compulsory, with exceptions only for medical certificates or approved major events.
  • The final exam is half the grade and, through plussage, can also overwrite the two tests, so a strong finish is rewarded twice. The 25% laboratory component is the one part the exam cannot rescue, and it is earned fortnight by fortnight.

No prerequisite. Restriction: FOODSCI 201. FOODSCI 100 is 15 points at Stage 1, limited entry, offered in Semester Two 2026 at the City campus, and is core to the BSc specialising in Food Science and Nutrition. Students outside that specialisation can consider FOODSCI 110 as an alternative.

Why it matters beyond the grade. Food science and nutrition graduates work in product development, food safety, analysis and regulation. This course is also named among the recommended foundations for students considering the Master of Nutrition and Dietetics.
