What is the Maillard reaction?
The Maillard reaction is a non-enzymatic browning reaction between amino acids (typically from proteins) and reducing sugars, occurring at elevated temperatures. It produces the brown color, complex flavors, and aroma compounds of roasted, baked, and seared foods (toast, coffee, seared meat, baked bread crust). Different temperatures and ingredients give different flavor profiles.
Why does lowering water activity preserve food?
Microorganisms (bacteria, yeasts, molds) need a minimum water activity (a sub w) to grow. Most bacteria require water activity above 0.91; molds and yeasts can tolerate water activity down to about 0.6. By drying, salting, adding sugar, or freezing (which reduces available liquid water), water activity drops below microbial thresholds, preventing spoilage.
What is HACCP?
HACCP (Hazard Analysis Critical Control Points) is a food safety management system that identifies biological, chemical, and physical hazards in food production and establishes critical control points (CCPs) where hazards can be prevented or eliminated. A HACCP plan includes hazard analysis, CCP identification, critical limits, monitoring procedures, corrective actions, verification, and record-keeping.
How is pasteurization different from sterilization?
Pasteurization uses time-temperature combinations to reduce pathogen and spoilage organism counts to safe levels, but does not eliminate all microorganisms. Pasteurized products require refrigeration and have limited shelf life. Sterilization (canning, retort processing) destroys all microorganisms including bacterial spores, allowing shelf-stable products at room temperature. Sterilization requires higher temperatures or longer times.
