Why do the angles always sum to 180?
Because you can place the triangle on a line, with one vertex on the line. The angles on the line sum to 180, and the angles inside the triangle correspond to these (one directly, the other two by parallel-line theorems). The result holds in Euclidean geometry; on a sphere or hyperbolic plane, the sum differs.
How do I find an angle when I only know the sides?
Use the law of cosines. For angle C opposite side c: cos(C) = (a^2 + b^2 - c^2) / (2ab). Compute the right-hand side from your three sides, then apply arccos to find C. Repeat for the other angles, or use the angle sum (180 minus the sum of the first two) for the third.
